The “Surely Carrot Counts as Salad” Loaf
Soft, warmly spiced and packed with enough carrot to feel wonderfully responsible. This easy loaf uses Verdant Life Carrot Cake Mix and very little effort.
Ingredients
- 1 packet Verdant Life Carrot Cake Mix
- 2 eggs
- 80 ml melted coconut oil
- 100 ml milk
- 1 medium carrot, finely grated
- A handful of chopped pecans or walnuts, if you fancy
Method
- Heat the oven to 180°C and grease a small loaf tin.
- Whisk together the eggs, coconut oil and milk.
- Fold in the cake mix, grated carrot and optional nuts.
- Pour into the tin and bake for 40–45 minutes, or until a skewer comes out clean.
- Let it cool before slicing—or at least pretend you tried.
Lovely as is, but cream-cheese icing never hurt anybody.
