Seed & Cranberry Rusks

In South Africa, coffee time is sacred—and nothing completes it like a classic, crunchy rusk. This recipe elevates the traditional morning dunk into a nutrient-dense, high-protein treat that is completely gluten-free. Made with our premium Protein Flour, these rusks are packed with rolled oats, wholesome almonds, sweet cranberries, and a generous 150ml of energy-giving seeds (like pumpkin, sunflower, sesame, and chia seeds).

Ingredients:

-    2 cups Verdant Life Protein Flour

-    1 cup milk of choice

-    1 tsp apple cider vinegar

-    150ml seeds of choice (pumpkin, sunflower, sesame, chia, etc.)

-    ½ cup rolled oats

-    2 tsp baking powder

-    1 tsp bicarbonate of soda

-    ¼ tsp salt

-    ½ cup plant butter (softened at room temperature)

-    150ml almonds (roughly chopped)

-    ½ cup cranberries

-    ½ cup coconut sugar

-    1 tbsp almond butter

-    1 tsp vanilla essence

-    Optional: 1 tbsp date syrup or other liquid sweetener of choice (for a sweeter rusk)

Method:

-    Prep the oven & tin: Preheat your oven to 180°C (fan-assisted) . Line a standard loaf tin (approximately 28cm x 10cm) with baking paper.

-    Curdle the milk: Stir the apple cider vinegar into your milk of choice and set it aside for a few minutes to curdle and form a dairy-free buttermilk

-    Mix the dry base: In a large mixing bowl, combine the Protein Flour, seeds, rolled oats, baking powder, bicarbonate of soda, and salt.

-    Rub in the butter: Add the softened plant butter to the dry mixture. Using your fingertips, rub the butter into the flour until it is fully incorporated, crumbly, and no large chunks of butter remain.

-    Fold in the mix-ins: Stir the chopped almonds, cranberries, and coconut sugar into the crumbly flour mixture.

-    Whisk the wet ingredients: In a separate bowl, whisk together the curdled milk, almond butter, vanilla essence, and date syrup (if using).

-    Combine & rest: Gently fold the wet mixture into the dry ingredients until well combined. Let the batter rest for approximately 10 minutes to allow the natural binders to absorb the liquid. It should form a very thick consistency.

-    Bake the loaf: Pour the rested batter into your prepared loaf tin and smooth the top evenly with a spatula. Bake for 25–30 minutes, or until a knife inserted into the centre comes out completely clean.

-    Slice & dry overnight: Remove from the oven and allow the loaf to cool completely. Slice the cooled loaf into rectangular fingers, place them directly on an oven wire rack, and let them dry overnight at 50°C–75°C (fan-assisted) with the oven door slightly cracked until completely crisp. Store in an airtight container.
